Raw Kale Greens Salad

Ingredients

  • 1 bunch of kale

  • 1/8 c olive oil

  • 1/2 tsp sea salt

  • 1/2 tsp pepper

  • 1 tsp red pepper flakes

  • 1 clove of garlic minced

  • 1/4 apple cider vinegar

  • 1/4 c green onion thinly sliced (only white part)

  • 1/4 c chopped sun-dried tomatoes

Method


Wash the kale thoroughly and chop into small pieces. Put into a large bowl and add the olive oil and sea slat. Mix well. Use hands to toss the greens and squeeze them to make sure that the salt gets right into them


In a separate bowl mix well the pepper, chilli flakes, vinegar, garlic, green onion and sun-dried tomatoes. Add to the kale. Mix thoroughly making sure all the kale is coated. Use hands if necessary.


Refrigerate overnight.
