Power Chocolate ISO Whey Cake

Ingredients for 8 servings:

Cake base

  1. 160g Oat Flour

  2. 40g ISO Chocolate Whey Powder

  3. 30g cocoa

  4. 1 tsp baking powder

  5. 1/2 baking soda

  6. pinch of salt

  7. 2 eggs

  8. 100g - 11% Fat Greek yogurt

  9. 60 ml - 3.25% Fat Milk

  10. 2 tbsp coconut oil

  11. 1 tbsp sugar

  12. vanilla extract

  13. 60 ml hot water

  14. semisweet chocolate chips


ISO Whey Chocolate protein Mousse

  • 150g cream cheese - room temperature

  • 100g - 11% Fat Greek yogurt

  • 30g ISO Chocolate Whey Powder

  • 1 tbsp cocoa

  • 1-2 tsp sugar or honey

  • 25g melted dark chocolate

  • Fresh strawberries for garnish


Method

  • Preheat the oven at 350F

  • Mix dry (1-6) and wet (7-12) ingredients separately

  • Combine and add hot water

  • Add chocolate chips

  • Pour into a 20-22cm pan and bake for 25-30 min

  • Whip all the ingredients for the mousse on high speed for 2-3 min until fluffy.

  • Chill for 30-45 min

  • Assemble the cake and top with strawberries.


Tips & Tricks

  • Do not overbake the cake - it should stay moist and tender - it is a denser cake

  • If the mousse feels too dense, add 1 tbsp of warm milk

  • Chill the assembled cake for at least 3 hrs before serving

  • Serve at room temperature for best chocolate flavour.
