The Big Chili

Ingredients

  • 1 tbsp olive oil

  • 1.5 lbs ground beef 

  • 1 C each chopped red and green bell pepper

  • 2 cloves garlic, minced 

  • 3 C beef broth

  • 1.5 C salsa

  • 1 can diced tomato

  • 1.5 tbsp chili powder

  • 1.5 tsp ground cumin

  • 1.5 tsp dried oregano

  • 1.5 tsp ground coriander 

  • Kosher salt and freshly ground black pepper

  • One 14-ounce can black kidney beans, drained and rinsed

  • One 14-ounce can red beans, drained and rinsed

  • 1/4 C minced fresh cilantro

  • 2 tbsp lime juice

  • 1 tbsp honey or maple syrup


Directions

  1. Heat olive oil in a large pot over medium high heat. Add beef. Cook and stir until lightly browned. Add peppers, onions and garlic. Reduce heat to medium. Cook and stir for 4-5 min, until vegetables begin to soften.

  2. Add broth, salsa, tomatoes and their juice, chili powder, cumin, oregano, coriander and black pepper. Bring to a boil. Reduce heat to low and simmer, covered, for 1.5 hrs, stirring occasionally.

  3. Add beans and simmer for 15 more min. Remove from heat. Stir in cilantro, lime juice and honey (maple syrup). Serve hot.
