All-Day-Breakfast in a Bun

Ingredients:
1 tbsp (15 ml) butter
8 slices peameal bacon or back bacon
6 eggs
1/4 cup (50 ml) milk
2 green onions, thinly sliced
1/4 tsp salt
1/4 tsp pepper
4 thin slices Harvarti or Cheddar cheese
8 thin slices of Tomatoes
4 leaves of lettuce (optional)
4 whole wheat kaiser buns or flat buns, halved and toasted
Preparation:
In a large non stick skillet, melt 1 tsp butter over medium heat. Brown bacon, about 4 minutes. Remove to plate and keep warm.
Meanwhile, in a bowl, whisk together eggs, milk, green onions, salt, pepper. In same skillet, melt remaining butter over medium heat; pour in egg mixture and cook, lifting edges with spatula to allow uncooked eggs to flow underneath, until set, about 8 minutes. Cut into quarters.
Sandwich 2 slices of bacon, 1 slice of cheese, omelette quarter, 2 slices tomato and lettuce in each bun
